Visit to the production of the spa confectionery Oberlaa
The students of the 2nd advanced course for tourism with focus on international patisserie and innovation management visited the production of the Oberlaa spa confectionery in Vienna's 10th district. The individual stations of the praline and cake production from delivery to serving were examined with great interest.
In addition to detailed information on the correct tempering of chocolate, our students were able to watch the filling of chocolates, the production of dough and the cutting of cake pieces. There was also no shortage of snacking on the delicious sweets. Finally, the huge cooling and drying warehouses filled with chocolate and ready-packed chocolates were visited.
